Ingredients:
- 1lb of ground turkey
- 1 pkg frozen spinach
- 1/2 cup chopped scallions
- 1/2 cup soy sauce
- 3 TBS sesame oil
- 1/4 cup cooking wine/chinese cooking wine
- 1/2 cup cornstarch or flour
- 1/2 cup scallions
- 2 TBS grated ginger route
- 1 pkg dumpling wraps or “skins”
Mix all of the above together and let it marinate in the fridge for at least an hour. The easiest way to make the dumplings is to hold a wrap in the palm of your hand, place 1 tsp of the filling in the middle. Using a (clean!) finger, trace a ring of water around the edge of the wrap and fold it in half (so it’s a half moon). To get a little fancier, after the initial fold, trace the arc of the half mood with more water and make three folds or crimps.
Place the dumplings in a pot of boiling water. Allow to boil for 3 minutes. Add one cup of cold water. Repeat two more times. Then serve the dumplings with soy sauce, sesame oil and/or white vinegar and/or hot sauce.
You can also fry them in a pan of vegetable oil or steam them in a bamboo steamer.
